Menu Plan Monday: Dec. 7th

I'm a little bit late posting my Menu Plan this week. I've had the menu done since Saturday, but sometimes, life just gets in the way! And it's still Monday, so I guess I'm not that late.

So here we go... it'll be a simple week. Lots of favorites, and nothing out of the ordinary.

Monday: Baked Haddock, Rice, Corn
Tuesday: DIY Night (track practice)
Wednesday: Ham Steak and Baked Mac 'n Cheese
Thursday: Make your own Pizza night
Friday: Potato Soup
Saturday: Boyd's Holiday Party

In other news, I think winter is here. We were on our 285th day in a row with less than 1" of snow. Which is quite the record for Syracuse, NY! But I think that's about to change. It's snowing right now. The photo above was just taken in our front yard. I'm not sure if we'll get an inch of snow tonight... but I would be willing to bet, that by the end of the week, we will be buried with snow. (It's going to snow everyday from now until April... mark my words!)


Yesterday, Eric and Kelsey put together a Gingerbread house. I think they had a nice time doing the project together.

Didn't it turn out really cute?! Looks good enough to eat!

Menu Plan Monday: Thanksgiving Week

Here we are, it's the week of Thanksgiving already. We're going to have a few easy days this week since we have lots going on! We've got a birthday (mine!) and we're hosting a big Thanksgiving dinner on Thursday. Should be a great week!

Sunday: Chicken Pot Pie, Mashed Potatoes
Monday: Grilled Cheese & Tomato Soup
Tuesday: Birthday Dinner at Smokey Bones
Wednesday: Pizza
Thursday: Thanksgiving... A big turkey feast with all the trimmings!
Friday: Leftovers of course!
Saturday: More leftovers!!

Here we are again with another new week. This week we're trying to empty out the freezer. And save a little on the grocery bill. Because next week the freezer will be full of a big, giant turkey!

I still can't believe it's November already. Winter is creeping up on us rather quickly. We had a good week last week and look forward to another this week!

Wow, where'd the last week go?! I feel like I was just typing up last week's menu plan. We did have another successful week with the menu. Everything stayed as it was. We loved the chicken/stuffing dinner so much, we're having it again this week!

Menu Plan Monday


Last weeks menu plan worked very well for us. We ate every meal (except the Saturday night one, we went out to eat instead). I really enjoyed not working this past week. It was nice to be able to make a nice dinner without being rushed or tired or coming down from a stressful day.

However, reality returns and here's this weeks menu plan... as I go back to work. Notice a few "easier" meals return.

Sunday: BBQ Chicken (on the grill!), mashed potatoes, baby carrots
Monday: Ground Beef Stroganoff over egg noodles, green beans
Tuesday: Stove Top Chicken Skillet Bake with sweet potatoes
Wednesday: Ham Steak, rice, mixed veggies
Thursday: Chicken Quesadillas

Menu Plan Monday


I have the week off, so I'm very excited to create "real" dinners this week! I started with a fabulous chicken pot pie last night. It was very much enjoyed by 3/4 of our family. And personally, I'm really looking forward to leftovers for lunch today!

Monday: Baked Haddock, Rice, Crescent Rolls and Corn

In other news, Alex and I hit the "links" yesterday, probably for the final time of the season. He did very well, managed to beat me by a mile. I just wasn't on my "A" game, I guess! In the cold and wind... my hands were frozen. Notice there's not much foliage at the golf course...

But there is in our backyard. We have several trees in the back that are beaming with bright colors.

I always love the bright colors against a bright blue sky... I'm going to try to get out this week to take some foliage shots around the area. I hope there are some bright blue skies in our near future!

Menu Plan Monday

I feel like I just did a menu plan! This past week sure went by quickly. Time always seems to go quicker when the weather is nice. Doesn't it?

We pretty much followed last week's menu exactly and are hoping to do the same thing this week. We're sticking with a few family favorites and throwing in a new grill item with the pork chops. Last week we ended up grilling our ham steak, which turned out really well. You really can grill pretty much anything!

Sunday: Cemetery Chicken, Salt Potatoes, Beans and Pasta Salad
Monday: Steak & Cheese Fajitas (with whole wheat tortillas) and French Fries
Tuesday: Chicken & Rice, Carrots and Crescent Rolls with Honey
Wednesday: Grilled Pork Chops, Alfredo Noodles, Baked Beans and Applesauce
Thursday: Whole Wheat Penne with Meat Sauce and Garlic Bread Sticks
Friday: Make Your Own Pizza Night

We're back to a normal week at the Hayden House. Last week was very confusing! Not to mention, with no menu plan, we had no idea what to make for dinner each night. I think we've grown used to having a menu plan. So, here's this week's Menu:

Sunday: Chicken Stroganoff with Whole Wheat Egg Noodles & Carrots

Monday: Grilled Hot Dogs, Baked Beans and French Fries

Tuesday: Whole Wheat Penne with Meat Sauce, Garlic Bread Sticks

Wednesday: Chicken Quesadillas

Thursday: Ham Steak, Au Gratin Potatoes & Corn

Friday: Something on the Grill... (Depending on the weather...)

Menu Plan Monday

We're discovering some new options to make our menus healthier, tastier and good for Eric's lowering of the Triglycerides. We tried some whole grain penne pasta this weekend and we both liked that. This coming week, we'll try whole wheat egg noodles, brown rice and whole wheat wraps in various recipes. We're all going to be healthier in the long run!

Sunday: Chicken Parmesan, Spaghetti, Garlic Knots, Salad & Birthday cake!
Monday: Leftovers... (track meet)
Tuesday: Chicken Stroganoff with whole wheat egg noodles and carrots

With Eric still researching "triglyceride lowering" options, we've decided that I should just go back to creating menus as normal and he will work around us, rather than us working around what he may or may not be able to eat. So, I'm back to "normal" with the menus!

Wednesday: Pizza Melts
Thursday: Baked Mac & Cheese and Corn bread

Menu Plan Monday

I'm going to have an even trickier time putting menus together now. Eric discovered that his triglycerides were high. (Very high...) So he needs to cut back on carbohydrates and sugars. So I've been trying to come up with some "healthier" meals for our menu plan. (Keep in mind, he's not a big fan of seafood or green vegetables!) Thankfully he's taking medication too.

Monday: Herb Roasted Pork Tenderloin, Rice, Corn and Crescent Rolls
Tuesday: Bear Creek Chicken Noodle Soup
Wednesday: Broiled Tilapia, Carrots, Creamed Spinach, Couscous
Thursday: Baked Chicken, Potatoes, Corn

Menu Plan Monday



I think it's time we break down and purchase a grill. I'm sitting here on Sunday evening writing this post and it's miserably hot in the kitchen, and most of it has to do with the fact that the oven is on, baking our BBQ chicken. Something that can easily be done on a grill without heating up an already warm house. The weather was amazing all weekend and we got the deck furniture set-up and we're planning on eating dinner outside whenever we can.

This week Eric will continue to have to work TelAuc this coming Thursday-Sunday, so he'll miss our dinners again. I might try to sneak in some Baked Salmon one night while he's working! (Last weeks Black Bean and Spinach Couscous was a huge hit with me and Alex.)

Sunday: Baked BBQ Chicken, potato logs, corn
Monday: Pork chops, Applesauce & Pineapple chunks, Mashed Potatoes, Crescent Rolls
Tuesday: Cheeseburger Pasta, Fresh Tomatoes

I decided that my menus are getting kind of boring and predictable. I had Eric look through a couple of cookbooks for some news ideas and things he'll like. We'll have a couple of old favorites too.

Last week was an easy menu week for us. We had no kids to feed, so we decided to simplify the menu. This week we're pretty much back to normal. We didn't end up making the potato soup last week, so we'll try again this week.

Menu Plan Monday





Last week, we followed the menu almost perfectly. We only switched 2 days around. But the entire menu was completed. This coming week, we don't have to feed any kids (except for tonight and Friday), so the menu will be very simplified. (On a side note, I do take salads to work for lunch quite often to at least get some green leafy vegetables into my system!)

Menu Plan Monday


I can't believe another week has already sped by. This coming Tuesday St. Patrick's Day, so we'll have a special dinner that day. I bought a nice ham today at Wegmans, and am already looking forward to leftovers. (We decided none of us really liked corned beef all that much, so we're skipping that tradition and going with good old fashioned ham.)


Oh and last week we didn't end up making potato soup the night we were supposed to, so we had that last night. (As you probably saw in yesterdays blog post.)

Here's our menu for the week ahead:

Sunday: Potato soup with bacon bits and crescent rolls

Monday: Cheeseburgers and fries

Tuesday: Ham, red potatoes, cabbage, carrots and rolls

Wednesday: BBQ chicken, sweet potato fries and corn

Thursday: Homemade Mac N Cheese and corn bread
