With Eric still researching "triglyceride lowering" options, we've decided that I should just go back to creating menus as normal and he will work around us, rather than us working around what he may or may not be able to eat. So, I'm back to "normal" with the menus!
Monday: D-I-Y dinner. (track meet)
Tuesday: Chicken Quesadillas, Taco Rice
Wednesday: Pizza Melts
Thursday: Baked Mac & Cheese and Corn bread
Friday: Pork, Cashew & Carrot Stir Fry
Saturday: ??
Sunday: Eric's Birthday!
